In terms of underrated, not very well known LEGITIMATE BANGERS in the video game soundtrack sphere, the first mission music from the mid-90s PC shooter Crusader: No Remorse is just straight up fire.

The two Crusader games have banger soundtracks.
Here's one that's cheating a little bit, but! The original System Shock had a very eclectic soundtrack, between its General MIDI abstractness and weird, techno electronica bops, it creates a pretty unique soundscape.
Anyway, sometime in the late 90s, early 2000s I came across a remix where someone essentially overlaid the songs one over another with the game's clips and sound effects and it's dope.

kind of stunned at the new deltarune chapters on several levels but just in general how clearly toby fox grew, and matured as a composer since making undertale. this song in particular was just just so cool to me. the odd meter stuff is used really effectively.

The arcade OSTs for the first two Bloody Roar games are deeply underrated, i think. Very shmup styled songs for a fighter and im really into it.
